They are remarkable for running rapidly over marshes and on floating plants. The purple gallinule of America is Ionornis Martinica, that of the Old World is Porphyrio porphyrio. The common European gallinule (Gallinula chloropus) is also called moor hen, water hen, water rail, moor coot, night bird, and erroneously dabchick. Closely related to it is the Florida gallinule (Gallinula galeata).

It is brought in masses, or cylindrical rolls, from Cambodia, or Cambogia, -- whence its name. The best kind is of a dense, compact texture, and of a beatiful reddish yellow. Taking internally, it is a strong and harsh cathartic and emetic.

Its distinguishing character is that of dissolving in hot water, and forming a jelly on cooling. It is an important ingredient of calf's-foot jelly, isinglass, glue, etc. It is used as food, but its nutritious qualities are of a low order.
